Job Summary

The Chef Manager will provide expertise, assist in management, and oversight of all day-to-day operations. Responsibilities include oversight of day-to-day menus, specific dietary needs, training programs, food safety, production and presentation of food, inventory management and cost control, adherence to local, state, and national food sanitation regulations and accurate use of vital kitchen equipment. The Chef Manager will work in collaboration with the Food Service Director and Supervisor to implement operations and procedures.

Position work schedule varies, shifts will include morning, nights, and weekends. This is a 7-day operation serving breakfast, lunch, dinner, and snacks. Mealtimes will vary.

Key Responsibilities:

  • Must know all aspects of nutrition, specific dietary choices, and experience in an institutionalized setting (ie. hospital, senior living facility)

  • Handles daily quality, consistency, and adherence to culinary standards.

  • Implements training and leads kitchen personnel and supervises/coordinates all related culinary activities.

  • Manages execution of daily food production including specific dietary meal studies and preparation for assigned location.

  • Estimates food consumption; selects and supports recipe development; implements production recipes to ensure consistent quality; establishes presentation technique and quality standards, plan, and price menus.

  • Works with the Food Service Director, dietitian, and clinical team to support and lead production and ordering systems for the operation.

  • Ensures culinary equipment is accurately operated and maintained.

  • Assists in the supervision of kitchen personnel with oversight for hiring, assisting in performance management, annual reviews, and initiating employee status changes.

  • Ensures daily compliance with sanitation and safety requirements that ensure a safe and sanitary work environment.

  • Ensures labeling requirements are met and ensures compliance with allergen containment.

Preferred Qualifications:

  • Must have a proven understanding of HACCP

  • Three years of culinary management experience in an institutionalized setting (ie. hospital, senior living facility) with nutrition, and specific dietary choices as a focus of the role.

  • Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

  • Experience with exposition cooking needed

  • Knowledge of P&L accountability and contract-managed service experience is desirable

  • ServSafe certification is a plus
